Results Delay

Once again, I’m going to have to apologize and say that I’ll have the results up Monday night. Sigh. I thought I’d have time on Friday to jot down the results from Thursday before heading home… but you know, it just didn’t work out that way. So sorry! So, results will be up on Monday!

Egg and Turkey Bacon Sandwich

If you add a red tomato and avocado, I’ll eat just about anything. So, I’m calling this an egg and turkey bacon sandwich, but the selling points for me are the tomato and avocado. And the ciabatta.

Tasty red tomato slices…

Fry an egg in some olive oil….

Thinly sliced avocado…

Thinly sliced red onion.

Ciabatta!!!

And the finished product! Oh yeah… add a slice or two of turkey bacon. Sometimes I get carried away and forget important steps! SOME people might want a dab of mayo in there, but I think it’s perfect without it!

Salmon Packets

I found this one on The Healthy Bites.… and I’m in love. A great way to get several veggies in and some heart-healthy fat!

Oh, take some foil sheets and put some delicious asparagus on them. Drizzle with olive oil, salt, and pepper. The recipe says to cook them for a few minutes before adding the other veggies, but I like my asparagus a little crisp so next time I’ll skip this part.

Hoisin sauce, soy sauce, honey… yum.

Wild-caught salmon. Hooray!

Sliced zucchini and yellow squash.

Add the sliced veggies to the foil packet and a little more salt and pepper.

Put the salmon on top and spread the sauce mixture on it.

Here’s the end result. I added a green salad and some whole wheat Israeli couscous cooked with garlic and red onion. Ahhhh…. So, let me just tell you… this dinner was awesome.
