So……. cake mix. Not the healthiest thing, right? You take a bunch of sugar and preservatives and add oil, eggs, and water. LOADED with fat and calories. Want to make it a little bit lighter? I can show you how! I’m not claiming these cupcakes are healthy. They definitely aren’t. However, they are lighter than they would be if you followed the directions on the box. Plus, this way is a lot easier and a lot more fun!
STEP 1: Choose a cake mix flavor. Dump the cake mix in a bowl.
STEP 2: Pour a can of diet soda into the bowl and mix.
STEP 3: Bake as directed on the cake mix box.
That’s all. Really and truly. The cake is a bit sticky, but it’s also light and delicious. You can add 2 tablespoons of Cool Whip for an additional 25 calories.
I recently made the following three combinations:
Orange: Vanilla cake mix with orange soda (regular)
84 calories each, 1 g fat
Brown: Spice cake mix with diet Dr. Pepper
66 calories each, 1 g fat
Dark Brown: Chocolate cake mix with diet Cherry Coke
71 calories each, 1 g fat
2 Tablespoons of Cool Whip is 25 calories, 1.5 g fat
There are unlimited flavor combination possibilities. Lemon soda and cherry cake mix? Cream soda and chocolate cake mix? Cherry 7 Up with yellow cake mix? I’ve read that it also works with brownie mix… I might have to experiment!
