*Holiday Recipe* Sweet Potato Casserole

This might be a good one to keep in mind for Thanksgiving! A holiday doesn’t have to be your downfall. Swap this sweet dish for your traditional sweet potatoes loaded with butter and brown sugar!

A couple of notes: Agave is easily found in the sugar section of your grocery store. However, if you don’t want to buy it, you could probably substitute with something like honey. Or even (gasp) a Tbsp. of brown sugar. Over 10 servings, it’s really not that much sugar. Also, if you passionately hate raisins like I do, you can leave them out. You’re an adult, and you no longer have to eat foods you don’t like. You’re freeeeeee! (Raisins = YUCK)

2 lbs sweet potatoes (about 5 medium), peeled
  • 1/2 cup golden raisins
  • 1 tsp agave
  • 1/4 tsp ground cinnamon
  • pinch nutmeg
  • pinch allspice
  • 8 oz can unsweetened crushed pineapple, drained
  • 2 tbsp chopped pecans
  • 1 cup mini marshmallows

Directions:
Cut sweet potatoes into large chunks; boil potatoes in a large pot covered with water until potatoes are soft if pierced with a fork. Drain and return to the pot.

Preheat oven to 400°.
 
Mash the sweet potatoes (I used my immersion blender) and add in raisins, agave, spices and pineapple.
