Monday

Tuesday

Spiced Tilapia Taco with Quinoa and Black Beans

Fish (except for fried) is always a good choice in a healthy diet! If you haven’t tried quinoa before, now’s your chance! It’s a grain with a great balance of amino acids. It has a slightly nutty flavor. It can be used as a substitute for rice or couscous. Give it a try! (FYI, it’s pronounced “keen-wah” [“wah” sound like “water”].)

Local Granola Pancake topped with Low-Fat Ricotta and Sugar-Free Orange Marmalade

Granola pancakes are a super tasty way to slip some heart-healthy grains into your breakfast!

Tofu’s one of those things I can’t seem to master on my own, but when other people prepare it, it’s quite delicious! Head on over for something a little different!

Friday

Banana and Candied Walnut Waffles

This sounds like dessert for breakfast, but it’s low-fat! Did you know that walnuts are rich in fiber, B vitamins, magnesium, and heart-healthy fats? This can help lower your bad cholesterol as well as lower C-reactive protein, which is an independent marker and predictor of heart disease.
